Protein Pancakes

This recipe is grain-free, gluten-free, low-glycemic, high-protein, and vegetarian.

At a recent lecture with Dr. Chad Guess, he shared a recipe for low-carb, high-protein pancakes that can help you get past that carb-craving that happens from time to time. 

Dr. Guess' Recipe for 1 Pancake:

1 Egg White

1.5 Tbsp Flax or Oat Bran

1.5 Tablespoon Low-Fat Plain Greek Yogurt

Cinnamon + Vanilla for flavor

These pancakes are 10g of protein each! Now, I'm not an advocate for a low-fat diet. I much prefer to focus on good quality fats that come from healthy sources, so I decided to change his recipe just a little bit. I included the egg yolk, as well as the option of a full-fat Greek yogurt.


Dr. Andrea's Recipe for 1 Pancake:

1 Egg

2 Tbsp Almond Meal (or Flax Meal)

2 Tbsp Greek Yogurt

Splash of Vanilla

Sprinkle of Cinnamon


I mixed the ingredients together, then heated up my pan. I used a dab of coconut oil to grease up the pan, before pouring in my pancake mix. These take a little bit longer to cook than a normal pancake. They need a bit more cook-time to firm-up before they are ready to be flipped, so just be patient.


Mine turned out excellent! They are grain-free, gluten-free, low-glycemic, high-protein, and so delicious! I served mine up with a pad of butter and a drizzle of organic agave, but you could easily sweeten them up with a dash of stevia right into the batter!
